should narrow down the list possibilities a little, as for ones i would recommend, elfen lied, berserk, hellsing, hunter x hunter

One that I just recently found is Magic Knight Rayearth. It definitely isn't as mature as some other animes though. Neon Genesis Evangelion is pretty decent and only has one season, so it should be worth watching...

Also, if you want a good manga, I would suggest Negima (my favorite) and Love Hina. They're both done by the same person (Love Hina was first)

You could watch rurouni kenshin, shugo chara, special A, matantei loki ragnarok and one Im watching myself now is suzuka. and for an manga you could read fruits basket or beast master ^^

If I were you I would check for new anime, and manga just released recently in japan. Such as kuroshitsuji, or Time of Eve. I would also like to recommend Kenichi; I believe that it is almost over, but remember the level of the art becomes better for kenichi over time.

Some good animes and mangas would be Vampire Knight, Bleach, Skip Beat, Special A, the Wallflower, Naruto, Naruto Shippuuden, Fruits Basket, and Gakuen Alice.
